Grilled Pimento Cheese Sandwich with Bacon

  1. 1 pound good Cheddar cheese, cubed
  2. 4 ounces mayonnaise
  3. 4 ounces softened cream cheese
  4. 6 roasted poblano peppers, peeled and seeded
  5. 1 large red bell pepper, peeled and seeded
  6. 8 slices applewood-smoked bacon, fried and chopped


  1. Toss everything into a food processor and run until smooth
  2. Slather on buttered bread
  3. Grill until cheese starts to ooze out
